Walnut Coffee Ring Cake

Ingredients:

Batter
250g butter
2 T ground Organico coffee (dry)
150 g Sugar
3 eggs
4 T strong coffee (from plunger)
1/2 tsp Vanilla
250g sifted flour with 1 1/2 tsp Baking Powder
1/2 tsp salt
2 T milk

Crust
40g butter
70g chopped walnuts
30g icing sugar 

Method:

  • Butter the inside edge of a large ring tin.
  • Spread with chopped walnuts and melted butter, then sift over the icing sugar.
  • Beat butter, sugar till creamed, add eggs 1 x 1, then coffee and vanilla. Add dry ingredients and milk.
  • Pour into the tin and bake at 180C for an hour.

 

For the optional coffee sauce: 70 mls strong coffee, 2 Tbsp sugar. Simmer over heat until it becomes syrupy.
